Fresh pasta, such as angel hair or spaghetti
- 4 slices thick cut bacon
- 2 tablespoons olive oil
- 1 shallot, minced
- 4 cloves garlic, minced
- 2 eggs, whisked
- Fresh cracked pepper and salt to taste
- Grated Parmesan or Asiago cheese
- Prepare pasta according to package directions.
- Saute bacon in olive oil until crisp.
- Add shallot and saute until soft, about 2 minutes.
- Add garlic and saute until garlic releases scent – about 30 seconds.
- Remove from heat.
- Add one tablespoon of your pasta water to eggs and whisk. Do this two to three times to temper eggs.
- Add pasta and eggs to pan with bacon and aromatics, stirring to combine.
- Add salt and fresh cracked black pepper to taste.
- Serve immediately, topped with grated cheese.
